Hopeful Hummus Soup – Ultra Creamy & Plant Based

It’s true – I named this soup after my grandma Hope. When I think of her I think of smiles, comfort and kisses atop a little girl’s head. She was always busy in the kitchen wafting with home cooked smells that would knock you off your feet if you were hungry.

This plant based soup is ultra creamy without the fat – the yukon gold potatoes and red lentils provide structure. The tahini, fresh lemon juice and lemon zest elevate it to the heavens. Add some good salt to underscore it.

It’s not a sad farewell to say goodbye chicken noodle soup…this is REAL bowl of health. This is what you deliver when someone is sick. It’s sky high in fiber and iron. Oh, plus it’s just 6 ingredients and 1 pot.

Hopeful Hummus Soup

Hummus lovers! You'll want to memorize this 6 ingredient, 1 pot recipe. This velvety and ultra satisfying soup is your new creamy, comfort soup. Replace it with those "other" soups if you're feeling under the weather because this is a soup that HEALS, not harms. It's made with red lentils (not garbanzo beans), that break down and become blend-able. Add a generous hit of garlic, the tang of lemon and tahini for richness and you've got super simple soup in under 30 minutes (and that's only 5 minutes in prep!) Bonus for the high level nutritional profile – each serving has around 15 grams of fiber, 13 grams of protein and 20% of your daily iron.

Equipment

  • 1 Soup Pan
  • 1 Immersion Blender

Ingredients
  

  • 1 yukon gold potato rough chop is fine (should be about 1.5 cups)
  • 1 medium size sweet onion rough chop
  • 3-4 cloves of garlic depending on how much you like garlic, adding more is a good thing
  • 2 tbsp tahini
  • 2 cups red lentils rinsed well
  • 5 tbsp fresh lemon juice
  • 6 cups water add more water in 1/2 cup increments if you want it thinner
  • 2 teaspoons of salt more or less to taste
  • 1 tbsp lemon zest add the zest of your lemon

Instructions
 

  • Add all ingredients to a large enough pot and simmer until lentils breakdown into a mush
  • Use an immersion blender to blend until it's creamy and there are no chunks of onion or potato. Alternately, cool enough to blend in a blender in batches and return to pan to warm.
  • Be SURE to season to taste the way you like it. This recipe is a good basic recipe but you may like a bit more salt or lemon or garlic. Make sure you adjust to make it YOUR soup.
  • Garnish away! Since this is a super thick and ultra creamy soup you can dot it with sauces such as a hot pepper sauce and swirl into designs. How fun! I like to add chopped italian parsley and a couple crunchy croutons.
  • Serve up with anything that goes with Hummus. Soft bread or naan for dipping, olives or tomatoes.

Notes

This is a very flavorful and thick soup.  If you prefer it thinner add water in 1/2 cup increments to achieve your favorite consistency.  You’ll also want to bump up the seasoning (lemon, salt, tahini) a bit to taste.  The soup will also thicken as it cools – it behaves much like split pea soup.
